About this coffee
Grown by smallholder farmers of the Worka cooperative in Gedeb, at the southern tip of the Yirgacheffe region, at 1,800 to 2,200 meters. This organic, Fair Trade washed coffee is bright and clean, with blueberry and grape, a floral lift and a lemonade-like sparkle.
We roast it light to let the heirloom varieties shine, and it is at its best as a pour over.

How we brew it
V60 pour over

- 01Rinse the paper filter with hot water and discard the rinse water. Add the coffee and make a small well in the center.
- 02Bloom: pour 60 g of water, swirl until all the grounds are wet, and wait 45 seconds.
- 03At 0:45, pour steadily up to 300 g over the next 30 seconds.
- 04At 1:15, pour more gently up to 500 g over the next 30 seconds.
- 05Stir once clockwise and once counterclockwise, let it drain a little, then give it a gentle swirl.
- 06Let it draw down completely. Aim to finish around 3:30.
